Ingredients

1/2 cup almond butter

1/2 cup vanilla vegan protein powder

1/2 tsp vanilla extract

1/4 tsp baking powder

1 tbsp coconut sugar

1/2 cup coconut flour

3 eggs

1/4 cup cacao nibs

Method

Preheat oven to 180 degrees centigrade

Combine all ingredients except for cacao nibs

When combined fold in nibs

Roll into 12 balls and place on baking tray lined with parchment paper

Gently flatten balls as mixture won’t spread out like regular cookies

Bake for 6-8 minutes until only the edges have browned
