Vegan Nut Protein Muffins

Muffin:

1 flax egg

60ml vegetable oil

125ml plant based milk

100g plant base sweetener (I use Natvia)

150g self raising flour

50g vegan protein powder, vanilla flavour (I use Free Soul)

1/2 tsp salt

50g vegan dark chocolate grated

Zest 1 orange

20g cacao powder (I use Naturya)

 

Stuffing:

50g almond butter (I use Meridian)

25g sugar free icing sugar

25g vegan butter

 

Topping:

50g chopped mixed nuts

Method

Mix flax egg and oil together

Add sweetener and combine

Combine flour, protein powder, cacao powder and salt and add to liquid mix

Pour in milk, mix until smooth

Grate the chocolate and zest the orange and add both to mix

 

Stuffing:

In a saucepan gently heat all of the stuffing ingredients until butter has melted

 

Pour half of the muffin mixture into 8 muffin cases

Evenly distribute the stuffing ingredients between the 8 muffins

Pour the remaining muffin mix over the top

Bake in preheated oven at 160 degrees fan for 20-25 minutes until browned around edges

Leave to cool for 10 minutes before transferring to a cooling rack
