100g self raising flour

1/2 tsp baking powder

2 small eggs

100ml unsweetened almond milk

2tsp Natvia plant based sweetener

Pinch of salt

Rapeseed oil for cooking

Method

Mix the flour, baking powder, sweetener and salt in a bowl

Whisk in the eggs and milk until smooth

Transfer mixture into a jug

Heat a little oil in a hot pan and slowly pour a small amount of mixture into pan, use a metal cutter if you want to make shaped pancakes!

Cook for 1-2 minutes or until bubbles appear

Flip over and cook for another minute or so until cooked on both sides

Repeat until all the mixture has been used

Serve with toppings of your choice
