Ingredients

5 eggs

50g smoked ham diced

10g raw spinach chopped

3 cherry tomatoes halved

Salt and pepper for seasoning

Method

Preheat oven to 180 degrees C fan

Lightly grease muffin tray or use silicone muffin tray

Whisk eggs together

Add salt and pepper to taste

Stir in diced ham

Pour into muffin tray (makes 6)

Sprinkle over chopped spinach

Place halved cherry tomato on top

Bake in oven for 20 minutes

Can be eaten immediately, refrigerated or frozen.

If reheating after refrigerating or freezing buzz in microwave for 10-20 seconds until hot throughout
