Ball:
30g smooth peanut butter
2tbsp cocoa powder
1tsp vanilla extract
2tbsp maple syrup
Sprinkle salt
20g vanilla or chocolate flavour vegan protein powder (I used Free Soul)
Coating:
60g 80% dark chocolate
50g very finely chopped pistachio nuts
Mix peanut butter and protein powder together
Stir in remaining ingredients until you have a doughy, truffle like texture
Roll mixture into 10 balls and set aside
Now comes the fun/messy part, the coating…
Line a baking tray with parchment paper
Buzz pistachio nuts in a blender until they are very finely chopped
Melt the dark chocolate slowly in a microwave, stirring periodically
Roll a ball in the melted dark chocolate and then in the chopped pistachio nuts until fully coated
Place the final article onto the baking tray and repeat with remaining balls
Chill in fridge for 10-15 minutes before munching!
Best kept in fridge
