Ingredients

160g grated carrot

Zest and juice of 1 orange

60g ground gluten free oats

30g vegan protein powder vanilla (I used Free Soul)

40g chopped walnuts

25g milled flaxseed (I used Yum & Yay)

1tsp ground mixed spice

2tsp maple syrup

Method

Grate carrots, I used raw but if you prefer the taste of cooked carrot then slightly cook the raw grated carrot before using in recipe

Zest and juice 1 orange

Add all of the ingredients into a bowl and thoroughly mix together

If the mixture is too dry to bind and roll into balls then gradually add extra orange juice or water

Roll into 12 even balls

Store in the fridge and consume within 4 days, if they last this long!

Also suitable to freeze.
